Greek Salad
Lunch idea or side salad
Ingredients:
(for side salad use 1/2 of the amount)
2 handful of mixed greens
1 handful diced tomatoes
1 handful diced cucumbers
a couple of olives (5-6)*
crumbled feta**
1/4 size small shaved onion or one shallot
fresh chopped green herbs (e.g., oregano and parsley)
lemon juice of 1/2 lemon
1-2 Tsp olive oil***
salt and pepper
Tips:
Red onions are more mild than white sweet onions.
Challots are a also another great mild option for onions.Olives are a must, any kind is fine.
No need to prepare the vinaigrette beforehand; salad does need to be tossed in the vinaigrette either.
Optional recommendations:
Mix it up with adding some pan-roasted zucchini slices
Add a couple of marinated artichokes (if you like and available)
Try adding pomegranate seeds for a tangy twist
Start with washing salad, dry and add on a plate as the base. Then top with your diced tomatoes and cucumbers, add olives, shaved onions. Add any other recommended veggies and seeds. Crumble feta over the salad and add chopped herbs. Add salt and pepper and drizzle lemon juice and olive oil evenly over your salad.
Remarks: What greens are best? Chopped Romaine lettuce, green and red leaf butter lettuce, young spinach, optional add a few argula leaves. You can also just get a ready washed lettuce mix for convenience.
